No yeast is added to produce the De Krans Wild Ferment Unwooded Chardonnay, as the fermentation process starts naturally. Once the fermentation is completed, the wine is kept on its fine lees for a further six months before bottling. Great care goes into the making of this wine, allowing for added complexity in its flavour and taste profiles. Louis describes the wine as being a beautiful lime yellow colour with a full, elegant nose of citrus and butterscotch. A well-rounded wine with flavours of lime, grapefruit and butterscotch on the palate, with a lingering, complex aftertaste and a well- integrated acidity. This wine goes very well with tuna and Yellowtail and retails for approximately R75 per bottle.
