We continue our port series talking about the ultimate enjoyment of wine - paired with food. When it comes to food pairings with port-style wines the options are endless. Think out of the box and experiment doing a full menu using only port-style wines. As mentioned in last week’s post, even though port-style wines may be sweet, they are also complex and balanced with a dry finish on the aftertaste, so pairing it with a dessert won’t make the overall taste overly sweet. Here are a few pairing suggestions and ideas, both sweet and savory, to inspire you:

*De Krans Original Cape pink - paired with nougat, white chocolate or baked desserts like a white peppercorn rosewater panacotta
*De Krans Premium Cape Ruby NV –paired with Cape Bobotie, waterblommetjie-bredie, rustic pastas, hearty soups
*De Krans Original Espresso – paired with baked desserts, especially coffee desserts like tiramisu or dark chocolate desserts like brownies
*De Krans Cape Tawny Limited Release NV – paired with puddings like malva pudding, crème brûlée, brown onion soup, loin of pork (stuffed with dried fruit), prawns prepared in a light Malaysian style, baked cheese like camembert with drizzled honey, nuts, and rosemary
*De Krans Cape Vintage – paired with baked desserts like chocolate fondant, piece of dark chocolate, Karoo lamb potjie, venison pie, roasted vegetable lasagna, well matured cheese (like cheddar)

Please note that De Krans Wines is open again Mondays to Sundays with wine tasting and wine sales from 9am - 5pm, and the De Krans Bistro and deli open from 10am - 4pm.

Please note that online orders received during the lockdown will be delivered in the order which they were received. We are extremely grateful for the lifting of the alcohol ban and that wine farms are exempt from the continued weekend ban on retail sales. De Krans Wines produces six different port-style wines. We will look at the first three today, and share the other three tomorrow.

*De Krans Original Cape Pink*
Looking for a lighter style port and something that you can enjoy in summer as well, De Krans produced the first pink port - the original Cape pink in 2008. Lighter in colour, sugar and alcohol, in comparison to a traditional port like the Cape Ruby, this wine has soft, elegant red fruit flavours of strawberries and cherries on the nose and cherries, plums and candyfloss on the palate. The rose petal pink colour is a result of only a few hours of skin contact with the juice cool-fermented for about 5 days before being fortified.

*De Krans Premium Cape Ruby*
Probably the most common port-style wine, the Cape Ruby is non-vintage, meaning different vintages are blended together after being matured in old 300 l barrels for different time periods. The Cape Ruby has a dark, red colour with ripe fruit flavours of red and blue berries, violets and cinnamon spice on the nose and rich flavours of cherries and ripe plum fruit with hints of chocolate and spice on the palate.

*De Krans Original Espresso*
Following the successful coffee Pinotage trend, the idea of a “coffee port” was born. After fermentation and fortification, wines from different vintages are blended together, after it has been matured in old 300 L barrels. Following the blending process, heavily toasted oak wooden blocks are added, resulting in subtle, roasted coffee mocha flavours. On the nose, the wine has notes of dark chocolate, violets and plums, with red fruits, dried prunes and cocoa on the palate.

*Post 3: De Krans Port Series*
What is a Port and how is it made?

Before we can look at different port-styles or where and when the port industry started in South Africa, it is important to start at the beginning. What is a port – style wine, how does it differ from dry wines and how is it made? The simplest explanation of a port style wine, or as it was traditionally called - port (more on this in a later post) is that it is a fortified wine. Fortified means that alcohol was added, in this case unmatured brandy spirits. With a dry, red wine the sugar of the grapes turns into alcohol through a process called fermentation, therefore resulting in a dry wine. With a port –style wine, the fermentation process is stopped by adding alcohol, therefore ending up with a higher sugar level (approximately 95g/l) as well as a higher alcohol content (16-19%, depending on the style).

FAQ: What is the difference between a port and a sherry?

Sherry: Fortification takes place at the end of fermentation. Most Sherry is then aged in a solera system, where vintages are blended together to ensure the consistency of the final product. Sherry's flavor ranges from bone dry to syrupy sweet. Dry Sherry ages under a cap of flor yeast, preventing the wine's contact with oxygen. These wines are usually crisp and refreshing. Other Sherries are aged in contact with air which gives them a nutty, rich flavor.

Port: Fortification takes place midway through fermentation. This kills the yeast which ends fermentation. Being that fermentation was not complete, a bunch of residual sugar, not yet consumed by the yeast, remains in the wine, making it sweet. So, while both Sherry and Port are fortified wines, they are quite different.
Of course, the wine making process also differs for the different port-style wines, which we will discuss in the next post.

*Post 2: De Krans Port Series*
The controversy surrounding the name "port".

Regardless of the success of the port-style wines of De Krans and Calitzdorp, you won’t find the word “port” on any label of a South African produced port-style wine since the end of 2011, as was agreed between the European Union and the South African government. The Cape Port Producers Association (CAPPA) had already decided to use the word “Cape”, paired with the specific style (eg Cape Ruby, Cape Vintage etc) in the late 1980’s, so this did not have much of an effect on the sales of port-style wines in South Africa and abroad. As a result, we have also been using the term “port-style wine”, but really, we are talking about a good, old port. Spending time in the trade, we have found that this is probably the biggest missing piece of education (a lot of people don’t know only a style is indicated and that a Cape Ruby is in fact a port), so be sure to share this one! The picture depicts the evolution of the De Krans port label, including 2007, 2010 and our current Cape Vintage Reserve label.

*Post 1: De Krans Port Series*
How and when did the Port industry start in Calitzdorp?

The first Portuguese grape variety was planted in 1973 by Chris Nel and his brother at De Krans. The two brothers, under the impression they were planting Shiraz, discovered two years later that they have in fact planted Tinta Barocca. This turn of events set out the most beautiful path, and ultimately, the start of the port industry in Calitzdorp. History repeated itself in 1999 when this time Tinta Amarela was mistakenly planted, having thought it was Tinta Roriz. Almost two decades later, Touriga Nacional was planted at De Krans in 1994 with the maiden vintage produced in 2000. Due to the similarities in terroir between Calitzdorp and the Douro Valley in Portugal, these Portuguese grape varieties flourished. In addition to the Tinta Barocca, Tinta Amarela and Touriga Nacional, the other two main Portuguese grape varieties used in the production of port-style wines are Tinta Roriz and Souzao. In 1977, the first port was produced at De Krans and since then there was no looking back.
